Rewording a preset turns it into your own item and removing one keeps it removed, so the list ends up matching your move instead of a generic template.

Yes. Custom items take any text and a category of your choosing, and if you leave the category blank they go into a General group. Custom items behave exactly like presets for ticking, editing, filtering and export.
It is saved automatically to your browser's local storage on that one device, so refreshing or returning later keeps your ticks. To move it elsewhere, use the export, which writes a plain-text file with [x] or [ ] against each item, grouped by phase, ending with your completed-over-total progress line.
