Beijing · imperial roasting tradition
The skin is air-dried, glazed and roasted separately from how the meat is treated, which is the entire point — this is a dish engineered for lacquered crackle, not for the duck itself. Watching it carved tableside is half the meal.

Delhi · murgh makhani
Invented at Moti Mahal in the 1950s, reportedly to use up leftover tandoori chicken by simmering it in a tomato-butter-cream gravy rather than waste it. The accident became the most exported dish India has ever produced.
Jeonju · mixed rice bowl
Rice, seasoned vegetables, gochujang and a fried egg, presented separately and then destroyed by the diner with a spoon — the mixing is not an afterthought, it is the final cooking step. The dolsot stone-bowl version adds a crisped rice layer that is arguably the best part.
Rio de Janeiro · black bean and pork stew
A Saturday institution built from black beans and whatever cuts of pork reward a long simmer — ears, trotters, ribs — served with rice, collard greens and orange to cut the fat. Brazil’s answer to the question of what a national dish should be.
Lima · citrus-cured white fish
Raw fish cured in lime juice, chilli and onion for minutes rather than hours — the leche de tigre marinade left over is often drunk on its own as a hangover cure. Peru’s claim to it is backed by a national holiday.
Brussels · mussels and double-fried chips
Mussels steamed in white wine, butter and shallot, served with a pot lid doubling as a shell bowl and a mountain of double-fried chips on the side. Belgium’s national dish is unfussy in a way that is easy to underrate.
Adana · hand-minced lamb skewer
Hand-chopped lamb, not ground, packed onto a wide iron skewer with a fat ratio strict enough that the city has argued about it in court. Grilled over oak charcoal until the outside blisters before the inside overcooks.
Penang & Singapore · Peranakan noodle soup
Two entirely different dishes share the name — Penang’s sour, tamarind-fish broth and Singapore’s coconut-rich curry version — and the argument over which is the real laksa has run for generations. Both are correct; neither side will admit it.
Singapore’s parliament has debated, only half-jokingly, which recipe deserves official status.
Marrakesh · slow-cooked in a conical clay pot
The cone-shaped lid recirculates condensation back into the pot, which is why a tagine needs so little added liquid to braise lamb into something that falls off the bone. Apricots or preserved lemon do the acidity work a wine reduction would do elsewhere.

Dishes are scored on the version most faithful to their region of origin, not on international adaptations, even where the adaptation is more commonly eaten worldwide.

No. Pizza Margherita sits at number one with three ingredients. Technique is scored on execution, not on how many steps a recipe has.
Cultural depth rewards a dish’s roots and consistency within its home region — it does not penalise adaptation elsewhere, which is scored separately under global adaptability.
