Coffee, wine, spirits and everything poured
Assessed blind wherever possible, on balance, complexity and value at the price. House styles are described rather than judged, so you can find the one that matches your palate.
Top of the category
What is actually worth pouring
Piedmont, Italy · Nebbiolo
Called “the wine of kings” for a reason that has nothing to do with marketing — tannin and acidity this high need a decade in the cellar before they soften into something drinkable, and the best examples reward the wait completely. Tar and roses are the cliché tasting note because it happens to be accurate.
Yirgacheffe, Gedeo Zone · washed process
Grown at altitude in the birthplace of coffee itself, and washed-process Yirgacheffe delivers a floral, almost tea-like cup that most drinkers do not associate with coffee at all until they taste it. Bergamot and jasmine notes are not a marketing flourish.
Yamazaki, Osaka · Suntory tradition
Built on imported Scottish technique but pushed toward a lighter, more precise style — smaller stills, meticulous wood management, less peat as a rule. The category’s global reputation went from novelty to benchmark inside two decades.
