Meat, fire and not much else to hide behind
A steakhouse has almost nowhere to disguise a mistake — the cut, the age, the char and the temperature are the entire meal. This list ranks houses on those fundamentals rather than on wine lists or room design, though the best examples tend to get those right too. Argentina’s parrilla tradition and America’s dry-aged tradition are judged on their own terms rather than forced into one standard.

A ten-table restaurant that sources a specific bloodline of Tajima beef in quantities so limited the restaurant will simply be out of steak some nights. Grilled over binchotan charcoal by the owner’s family, largely unchanged since the 1960s.

Puck’s answer to the classic American steakhouse comes with a modernist dining room and a beef programme that runs from Midwestern prime through Japanese Wagyu on the same menu, priced accordingly. A genuine power-dinner room in a city built around them.

Sits on the Puerto Madero waterfront and has fed everyone from local families to visiting heads of state the same grass-fed bife de chorizo for decades. A tourist-friendly reputation that, unusually, has not come at the expense of the actual grilling.

A Russian-founded steakhouse group that built its reputation on imported Black Angus and a genuinely serious dry-ageing room, expanding across Eastern Europe on the strength of consistent sourcing rather than novelty.

A single-location institution with its own onsite butcher shop, wine cellar holding hundreds of thousands of bottles, and a dessert room upstairs built entirely separately from the main dining room. Eccentric in ways a chain steakhouse could never justify.

Built the steakhouse-as-nightclub format — DJ booth, low lighting, a bar scene as central as the dining room — that plenty of imitators have chased since. The beef is genuinely solid, even if the atmosphere is doing a lot of the selling.
